Snapper Carpaccio with Truffle Oil

The key to success here is the quality of the fish. Go and visit the local seafood crew, not your supermarket. We are a little spoiled here with our locally caught snapper but swordfish, tuna, salmon or most fresh firm fish will do. Gently slice the fish fillet as thin as you can across the grain.

Lay out in a flower formation and layer with thinly sliced blood orange tomato. Drop your favourite capers here and there, then sprinkle with finely chopped Lemon Myrtle. Add a few drops of freshly squeezed lime juice but not too much. A drizzle of our Truffle Oil and a little of our Truffle Salt and you are in for a delicate, tasty and super healthy treat.
