Truffle Stuffed Pappadelle Pasta

To start, add eggs and salt to a well in semolina flour and knead until elastic, then lay flat. Grate truffle with a microplane and cover dough then knead the truffle through. Next, run the dough through a pasta maker, cover with flour, roll and cut to the desired width. Finally, boil the pasta until al dente and create your favorite pasta dish.

Our favorite? Slow roast lamb, sweet potato and onion with cider then set aside. Heat a skillet, add grated parmigiano and the pasta then gradually add pasta water and toss until creamy. Spoon the roast lamb and potato over the pasta, shave heaps of fresh truffle on top and serve while hot.
