Egg Drop Soup with Truffle

Egg Drop Soup is a traditional Chinese staple made with a simple yet flavourful combination of ingredients. It is great as a starter or even for breakfast.

Start by boiling chicken or vegetable stock in a pot, then reduce to a simmer. Add sesame oil, salt, sugar, and white pepper to taste. Beat eggs lightly, then slowly drizzle the egg mix into the simmering soup while stirring with a ladle. Ladle the soup into bowls and mix through chopped spring onion and grated Truffle. We like to add a ridiculous amount of shaved truffle to garnish. A dash of our Truffle Oil is another touch to bring further depth to the delicate flavour or as a replacement when fresh Truffle is not available.
